Not quite ready to return to reality after my New Mexican desert escape, I ventured out to attend Happy Hour with my favorite IT Team and feasted on this boatload of sushi. If there's anything better than seeing the amazing group of IT faces that I'd been missing over the past couple of weeks, it's eating cheap gourmet sushi and drinking half price wine at a local hot spot, HIRO 88. What a perfect way to come back down to earth after leaving it so unexpectedly.
What's an Empty Nester to do when a college student returns home for Easter? Color eggs, of course. And now the nest is looking all fancy with bright pastel-colored eggs, at least until said eggs end up in breakfasts and salads over the upcoming week. Must enjoy this pseudo-full nest while I can, in the meantime.
Perfect comfort food for a day-after-sick-day: Pasta e Fagioli, Olive Garden copycat recipe for those who'd rather pay a fraction of the cost for a whopping potful of tasty Italian zuppa, the gift that will last all. week. long. *heavenly!*
After visiting the youngest who is currently away at college and offering to take him out to dinner, I felt a little ambivalent when he suggested we partake in actual sushi eating. My brain flashed to **RAW FISH ALERT** but then thought, But this dude is the pickiest eater on the planet, so how can it possibly be bad? And I also thought, Wait - this guy has already eaten sushi and managed to live through it, so why not give sushi a try?
So that's just what we did - WE ATE SUSHI. AND IT WAS DELICIOUS. AND NOW I AM ON A LIFE-LONG QUEST TO TRY MORE VARIETIES OF SUSHI. And reflecting back over the past 24 hours I am left wondering what the heck just happened and why I have been left unaware of the amazingness that is SUSHI all my life. To think that I could have died without ever experiencing this delicacy is a complete and utter shock to my system. Cooked up all kinds of goodness to ring in 2018 including Crab Rangoon, Wontons, Bruschetta, Italian Pigs in Blankets, and Stuffed Mushrooms. Not pictured: Korean Beef Lollipops - except without lollipop stick skewers due to the lack of beef skewer volunteers. Everything was absolutely scrumptious and with tons of leftovers to snack on for the next couple of days, if it even lasts that long. Best. Tradition. Ever.
Our plan was to have the College Peeps all home by Friday and eating my famous lasagna by Saturday. And guess what? It all worked out, and with all of us going back for 2nds and 3rds! We'll be eating 4ths tomorrow after Christmas Eve mass, so it's the "Gift that Keeps on Giving." Praise be to God.
This is how the CSM IT Team completes their holiday celebration - by sharing not only ONE but THREE types of desserts at Johnny's Italian Steakhouse. I shall never leave this team, God help me.
I was all excited to score myself a tasty-looking lemon poppyseed muffin at the staff coffee hour today, only to find out I actually had my hands on a blueberry muffin instead. But alas, that muffin was just as delicious, free, and Snapchat, Instagram, Facebook, Bitmoji-worthy, nonetheless.
I get absolutely NO KICKBACKS from Blue Apron for posting this meal. In fact, I am not sure exactly what keeps me coming back to making more of these dishes, but I do. And they taste AMAZING. Not only that, but I get to use funky words like "Piquillo" and ""Iberian-Style Spice Blend" when describing the dishes I've cooked up. Ok well, if anything, Blue Apron helps me to sound well-versed in my cooking habits, right?
